20 Ways To Eat: A Tomato #13

I’ve gotten really good at dishes that are made in one pot. This includes my favourite “stir fry”. I say its a stir fry because it has noodles among other things, but there’s no actual frying or sauce. Most importantly, it’s perfect for those days when you only have minutes to eat.

Liane’s Stir Fry Fake-Out

Cook Time: 10 min or less   Yield: 1 serving


  • 1 package ichiban noodles (these are best as they soak up spices well)
  • 1 C frozen vegetables of your choice
  • 1 C grape tomatoes
  • 1/2 C pre-cooked chicken, cut into bite-sized pieces
  • 1 tsp minced garlic
  • pinch coriander
  • pinch cumin
  • black pepper to taste


Boil 2 C water and add seasoning packet from noodles, garlic, coriander and cumin. Add noodles, then frozen vegetables. When noodles are almost done, add chicken to heat it up.

While noodles are cooking, halve the tomatoes into a bowl.

Strain noodles and vegetables and add to tomato bowl. Stir well and let sit for a minute to heat up tomatoes slightly.
