Candied! Candied nuts are delicious and you can rationalize the sweetness by the fact that they’re chock full of protein and other goodness. Plus, they last a little while (if you don’t eat them in one sitting) and they’re highly portable for snacks on the go.
To make two cups:
PREP 5 mins COOK 15 mins READY IN 35 mins
- 1/2 cup water
1 cup white sugar
1 tablespoon ground cinnamon
2 cups whole almonds
Combine the water, sugar and cinnamon in a saucepan over medium heat.
Bring to a boil then add the almonds.
Cook and stir the mixture until the liquid evaporates and leaves the almonds with a syrup-like coating.
Pour the almonds onto a baking sheet lined with wax paper and separate with forks.
Cool for 15 minutes.
